How to make it

  • Toss the pork cubes with the chili powder, coriander, and salt until coated evenly.
  • Heat a large, ungreased skillet over medium-high heat, then lightly brown the pork with the onion and garlic.
  • Transfer the pork mixture to the slow cooker, stir in the beans, tomatoes with their juice, and water. Season with pepper.
  • Cover and cook on LOW for 8 to 9 hours.
  • Serve over steamed white rice.

    I had two very meaty pork ribs that I cubed up for this. It was really easy to throw together. It had a bit too much liquid for my taste. I think I would cut the amount of water in half and also add a couple more cloves of garlic. I used a slotted spoon to serve it up with. Very good. A nice smell to come home to after work. Added a picture. Thank you!
