Asparagus Salad

- 1 LB fresh asparagus one inch of the bottoms trimmed off shopping list
- 1 cup of Sicilian olives or kalamata shopping list
- 1 cup of cubed feta cheese shopping list
- 1 med red onion sliced thin shopping list
- 1 TBS aged balsamic shopping list
- 1/4 cup of greek olive oil shopping list
- This requires no seasoning but to each their own. shopping list
- I also use tomatoes when in season shopping list
How to make it
- Lay asparagus out after washing and with a knife cut the entire bunch into thirds.
- Bring a pot with 4 cups of water to a boil
- Add the lower part of the asparagus first to the pot of boiling water and wait 30 seconds.
- Add the middle bunch to the pan and wait another 30 seconds.
- Add the tops to the pan of boiling water and wait 30 seconds.
- Drain in a colander and run under cold water to stop the cooking process ( or shock them in an ice water bath)
- Set aside in the colander and allow to drain.
- In a nice dish add the aparagus, onion and olives along with the balsamic and olive oil and toss with hands.
- Add the feta and toss a few times.
