How to make it

  • Lay asparagus out after washing and with a knife cut the entire bunch into thirds.
  • Bring a pot with 4 cups of water to a boil
  • Add the lower part of the asparagus first to the pot of boiling water and wait 30 seconds.
  • Add the middle bunch to the pan and wait another 30 seconds.
  • Add the tops to the pan of boiling water and wait 30 seconds.
  • Drain in a colander and run under cold water to stop the cooking process ( or shock them in an ice water bath)
  • Set aside in the colander and allow to drain.
  • In a nice dish add the aparagus, onion and olives along with the balsamic and olive oil and toss with hands.
  • Add the feta and toss a few times.
