Spinach Stuffed Tomatoes

- 1 package Stouffers spinach Souffle, defrosted shopping list
- 8 small to medium tomatoes shopping list
- 1 cup shredded Parmesan, divided shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 350
- Cut 1/2 inch slice from top of each tomato
- Scoop out pulp, leaving shell intact
- Salt shell and turn upside down to let moisture drain for 10 minutes
- In mixing bowl, combine spinach, 1/2 cup cheese and pepper
- Fill each tomato with spinach mixture
- Sprinkle remaining cheese over top
- Place tomatoes in muffin tin
- Bake 25 minutes
