Light Lemon Cauliflower

- 1/4 cup fresh parsley, chopped and divided shopping list
- 1/2 teaspoon grated lemon peel shopping list
- 6 cups, about 1-1/2 pounds, cauliflower florets shopping list
- 1 tablespoon butter shopping list
- 3 cloves galic, minced shopping list
- 2 tablespoons fresh lemon juice shopping list
- 1/4-1/2 cup grated parmesan cheese shopping list
How to make it
- Place 1 tablespoon parsley, lemon peeland about 1 inch of water in a large saucepan.
- Place cauliflower in steamer basket and place in saucepan.
- Bring water to a boil over medium heat.
- Cover and steam for 15-17 minutes or until cauliflower is crisp-tender.
- Remover and place into a large bowl.
- Keep warm.
- Reseve 1/2 cup of hot liquid.
- Heat butter in a small saucepan over medium heat.
- Add garlic,cook and stir for 2-3 minutes, or until soft.
- Stir in lemon juice and reserved liquid.
- Spoon lemon sauce over cauliflower.
- Sprinkle with remaining parsley and parmesan cheese before serving.
- Serve with lemon sices if you want to be fancy.
