Chef Albys Sauteed Shrimp

- 2 pounds of uncooked shrimp-cleaned and shelled. shopping list
- 1 large onion chopped shopping list
- 1 green pepper chopped shopping list
- 1 yellow pepper chopped shopping list
- 2 chives chopped shopping list
- 1/2 pound of baby carrots shopping list
- 4-5 tablespoons of chopped garlic. (Go ahead-be daring and use more!) shopping list
- 1/2 tsp ginger shopping list
- 1-2 tsp chili powder. ( I use 2 as I like it spicy) shopping list
- olive oil-enough to cover the bottom of the skillet. shopping list
- 1 stick of butter or margarine shopping list
- 1-2 tablespoons of lime juice shopping list
- oregano, basil-just eyeball it. shopping list
- Fresh chopped cilantro-again eyeball it. shopping list
- Fresh chopped parsley-yup, eyeball that too! shopping list
How to make it
- Coat skillet with olive oil and add 1/2 stick of butter or margarine.
- Add all chopped vegetables to the pan and begin to lightly saute.
- Add shrimp (the stars of this show!) to the pan and saute until almost done.
- Sprinkle lime juice over the shrimp.
- Add all spices EXCEPT THE PARSLEY.
- Cover and cook until the shrimp are cooked and coated with all of the spices, and the peppers and onion are all well sauteed.
- Remove from heat and sprinkle with parsley. Serve on a bed of brown rice.
- NOTE: you can also add 1/2 pound of scallops to this along with the shrimp.
