Hearty 5-cheese Tortellini And Beef Stew

- 1 lb. lean ground beef (I use 9% fat) shopping list
- 1/2 chopped onion shopping list
- 1/2 tsp. minced garlic (or more) shopping list
- 1 can beef broth shopping list
- 1 can (15 oz.) petite diced tomatoes (I drained, but you don't have to, we like a thick stew) shopping list
- 1 can tomato sauce (I used a 7 oz. but a 15 oz. would do) shopping list
- 1 can (15 oz.) cannellini beans (or white kidney)(I rinse and drain, but you don't need to) shopping list
- Chopped mushrooms (As many as you like, I used about 6 small white ones) shopping list
- 1 Tbls. dried Italian seasoning (+/-) shopping list
- 1/2 tsp. nutmeg (approx.) shopping list
- salt and pepper to taste shopping list
- 5-cheese tortellini - about 20 +/- (I had fresh/frozen, but dried ones would work) (any tortellini will do - I buy mine at Costco in the fresh section) shopping list
How to make it
- Brown ground beef in large soup pan (or dutch oven) drain fat
- Add onion and garlic to pan when beef is still browning
- Add broth, diced tomatoes, tomato sauce, beans, and seasonings
- At this point, you can leave to simmer on stove covered for as long as you need
- I wait to add the mushrooms cuz we like them a little firmer, but you can add whenever...
- When ready to eat, turn up burner till stew lowly boils and add tortellini
- It cooks in about 6 or 7 minutes (if thawed)
- That's it! Easy Peasy!
