Mouthwatering Arroz Con Pollo

- 1 tbsp. olive oil shopping list
- 4 chicken thighs shopping list
- 4 chicken drumsticks shopping list
- 2 tsp. salt shopping list
- 1/2 tsp.fresh-ground black pepper. shopping list
- 1 small onion chopped. shopping list
- 2 cloves garlic,minced. shopping list
- 1/2 green pepper chopped shopping list
- 1 3/4 cups canned tomatoes,drained and chopped shopping list
- 2 cups low-sodium chicken broth or homemade stock. shopping list
- 1 cup long-grain rice shopping list
- 2 tbsp. chopped fresh parsley. shopping list
How to make it
- In a large,deep frying pan,heat the oil over moderately high heat.
- Season the chicken with 1/4 tsp. each of the salt and pepper'
- Cook the chicken,turning until wll-browned,about 8 minutes in all.
- Remove.Pull out all except 2 tblsp. fat from the pan.
- reduce the heat to moderatly low.
- Add the onion and garlic to pan,stirring to soften about 2 minutes.
- Add the bell peppers and cook stirring occasionally,until they start to soften,about 3 more minutes'
- Add the tomatoes and stock.
- Add remaining 1 3/4 teaspoons salt and 1/4 teaspoon of the pepper.
- Bring to a simmer.
- Stir in the rice and add the chicken in an even layer.
- Simmer partially covered,over moderately low heat until the chicken and rice are just done.,20-25 minutes.
- Sprinkle with the parsley.
