Easy Oven chicken

- 1 nice corn-fed chicken (bio if you can get it) shopping list
- 2 onions shopping list
- 2 shallots shopping list
- 4 tiny fresh italian garlic 'heads' (oh, they are wonderful!) shopping list
- 3 potatoes shopping list
- 3 carrots shopping list
- a large white onion shopping list
- white wine shopping list
- gee shopping list
- oilve oil shopping list
- all sorts of herbs - the rest from the terrace pots shopping list
- 1 non-treated bio lemon shopping list
- pepper, salt, paprika, honey, chili flakes shopping list
- (sorry, cannot remember anything else) shopping list
How to make it
- heat the oven to 200° CENTIGRADE
- wash chicken, pat dry
- in bowl mix pepper, salt, paprika, honey, chili flakes, olive oil,
- brush chicken with mixture
- take 'dutch oven' ,put some gee into it
- heat until very hot, brown chicken on all sides
- put herbs, onion quarters, lemon slices into chicken
- then put chicken into oven
- peel and quarter potatoes
- peel and cut into pieces about the size of little finger (mine :-))
- peel and leave whole little garlic 'heads'
- peel and halve onions, leave shallots whole
- remove roasting pann from oven,
- add vegetables, putting some sea salt and pepper on
- brush chicken again with mixture
- after approx. 20 minutes add some wine
- turn down heat to about 160 °CENTIGRADE
- chat with your friend
- have a martini
- have a good laugh,
- set the table
- remove chicken and vegetables from roasting pan
- add a tiny little bit of broth, wine, water,
- scrape all that tasty brown stuff off sides of roasting pan
- and that's it
- it was a lovely, naturally thickened sauce (gravy?)
- my friend and I just loved it
- all there - vegetables, potatoes, meat, gravy
- and the wine, naturally
