Chipotle Puree

- 6 - cups water shopping list
- 4- ounces dried chipotle chiles, stems removed shopping list
- 2-tablespoons achiote paste shopping list
- 1- cup firmly packed brown sugar shopping list
- 1/4- cup red wine vinegar shopping list
- 2- teaspoons salt shopping list
- 1/4- cup olive oil shopping list
How to make it
- combine all the ingredients in a saucepan over high heat
- bring mixture to a boil..then decrease heat to med-low and simmer for 30- 45 minutes
- remove from heat, coo completely
- puree the mixture in a food processor until smooth
- store in airtight container for up to 3-4 days
- makes 1/4 cup
