Sweet Potato Biscuits Tinks Way

This is a really old recipe .......... it tastes really good i was surprised the 1st time i tried them ...................enjoy ........
Ingredients
- 1 1/2 cups sweet potatoes ( 2- 3 medium ones) shopping list
- 1/2- cup butter.............this was margarine orginally but i changed it i like the butter better .use what you want ............. shopping list
- 1/2-cup sugar........... shopping list
- 1-teaspoon salt........ shopping list
- 4-1/2 teaspoons baking powder......... shopping list
- 3 1/2- 4 -cups all purpose flour .....test it out if you need the 4 cups ........ shopping list
- 1 cup raisins .............( optional) but very good ........ shopping list
- cinnamon and sugar.............rolll the raisins in this mixture shopping list
How to make it
- Boil and peel and mash the sweet potatoes
- while hot measure 1 1/2 cups of the mashed potatoes in a large bowl
- add butter, sugar, and salt
- mix well
- sift together the flour and baking powder
- add to the potato mixture
- if using the raisins add and mix well
- work with hands to mix and make a soft dough.........adding only necessary flour
- chill dough if you like or roll it out and cut with biscuit cutter or glass amt will depend on size cut ......
- place on greased baking sheet
- i like to sprinkle a little cinnamon and sugar on top
- bake at 400 degrees f. .......about 15 - 20 minutes until only lightly golden brown.......
- and serve .............yummmm
- i love cinnamon with sweet potatoes so i let extra fall in lol
