Gullah Chicken Stew

- 1/2 tsp dried thyme shopping list
- 1/2 tsp dried savory shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 2 (3lb ) chickens,cut in quarters shopping list
- 1 c flour shopping list
- 4 Tbs vegetable oil shopping list
- 2 c diced yellow onion shopping list
- 1 c diced carrot shopping list
- 2 cloves garlic,peeled and crushed shopping list
- 4 c chicken broth shopping list
- 1 c fresh or frozen green peas shopping list
- Hot cooked rice shopping list
How to make it
- In small bowl,combine thyme,savory,salt and pepper. Rub mixture evenly on pieces of chicken.
- In a large bowl,place flour. Dredge chicken in flour,shaking to remove excess.
- In large dutch oven,heat oil. Brown chicken,in batches,on all sides. Remove from pan,and set aside
- Add onion,carrot and garlic to Dutch oven and cook untilvegetables are tender,approximately 3 mins. Add chicken broth,bring to boil.
- Return chicken to pot and bring mixture to brisk simmer. Simmer until chicken is fork tender and falling off the bone.,approx. 1 hour. Add peas,and cook till tender,10 mins for fresh and 5 mis for frozen. Taste and adjust seasoning,if desired. Serve over rice
