Ingredients
  • Artichokes
  • Melted butter
  • Mayonnaise - blended with lemon juice to taste, soya sauce (just a little), black pepper and a dash of ground ginger.

Directions
  1. Wash artichokes under cold water, making sure to rinse between each leaf.
  2. Pull or cut off lower petals.
  3. Using a stainless steel knife, cut off the stem, close to the base of the artichoke. (Tip: The stems are edible and can be left on, if desired and eaten with the petals).
  4. Slice off the top quarter of the artichoke, creating a flat top.
  5. Using kitchen shears snip off the sharp tips of each petal.
  6. Please cleaned artichokes, standing upright in a large soup pot.
  7. Fill with water to cover chokes and and the juice of one lemon.
  8. Cover and simmer at least 30 minutes, until petals release easily from the artichoke.
  9. Drain artichokes upside down for a couple of minutes.
  10. Serve warm with melted butter or mayonnaise (blended).
  11. How to eat:
  12. Peel off outer petals and dip inside tip into sauce or butter. Place petal in mouth and pull through your teeth, removing the tender part of the choke at the base of the petal. Discard the rest of the petal. Repeat until all the petals are enjoyed. Spoon or sut out the fuzzy or hairy portion located at the base of the choke. This part is known as the heart or bottom and is tender and entirely edible. It may seem like alot of work ... but believe me it's worth it! Enjoy!

You are sooo right, it is worth the effort. When my girls were small they loved to eat off the outer leaves, that was fun but they wouldn't touch the hearts. We loved that because that meant we got to eat two hearts each. But alas they finally discovered how delicious the hearts were but we all love those artichokes. Being on WW's for awhile I made a sauce of water, lemon juice and butter salt or butter buds and lemon juice and came to love that more than plain melted butter. Thanks for posting
