Ingredients

How to make it

  • Preheat oven to 180 C/350F
  • Grease a 18cm/7 inch round cake pan.
  • Peel the rind from the clementines and chop finely.
  • Cream the butter, sugar and clementine rind together in a bowl until pale and fluffy.
  • Add the eggs, one at a time.
  • Beat well after each addition.
  • Gently fold in the flour, ground almonds and cream.
  • Spoon the mixture into the prepared pan.
  • Bake in preheated oven for 55-60 minutes or until fine skewer inserted into middle of cake comes out clean.
  • Leave to cool.
  • To make the glaze put the clementine juice in a small pan with the sugar over medium low heat.
  • Bring to a boil.
  • Reduce the heat and simmer for 5 minutes.
  • Turn the cake out onto a wire rack.
  • Drizzle the glaze over the cake until it has been absorbed and then sprinkle 2 T of sugar.
  • Leave to cool completely before serving.

    Okay... official family review: Moist and delicious. We devoured this cake! I gave our daughter some ingredients she doesn't normally have on hand and the small baking tin and had her prepare the cake, she bakes nicely. She complained about ingredient measures such as "6 oz castor sugar" but whipped out her I-Touch and found a site to do the measuring cup equivalents and got past that detail. She did say next time she makes this cake she'll use the clementines' rind but use OJ instead... she found the juicing of clementines went through too many of these little fruits to get ample juice for her liking. She'd rather eat the fruit. So - will we do this cake again? Definitely and most happily. It is delicious. PS - for US bakers... use almond paste ;-) I had to translate ingredients for my husband when he phoned me from the grocery shop and couldn't find the almond paste. If that's a problem - consider it solved and bake this cake!!!

    Debra - this is an orginal and unique recipe and perfect for just a few people. It's my husband's birthday this weekend and we love citrus and clementines are in season... guess what I'm baking for him?
