Smokin Zuch Appetizer

- 3 cup squash, zucchini - thinly sliced shopping list
- 1 cup Bisquick Heartsmart Mix shopping list
- 1/2 cup onions, Raw, minced shopping list
- 1 tsp minced chipotle pepper in adobe sauce shopping list
- 1/2 cup Grate-it-fresh parmesan cheese shopping list
- 2 tbsp parsley fresh shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp oregano, fresh shopping list
- 1/4 tsp ground black pepper shopping list
- 1/4 tsp spices, cayenne pepper shopping list
- 1/4 cup vegetable oil shopping list
- 1 cup egg Beaters shopping list
- * 1/4 cup apple sauce natural shopping list
How to make it
- Heat oven to 350ºF. Grease bottom and sides of rectangular pan, 13x9x2 inches.
- Thinly Slice the zuccini, mince the onion, mince the parsley and oregano and toss all together and set aside. I also through in one minced chipotle pepper in adobe sauce because I like that smokey heat.
- In a separate bowl mix the egg, oil, apple sauce, salt and pepper.
- In a gigantic mixing bowl pour in the baking mix and Parmesan and mix together well. Then pour in the egg mixture and beat together until you are lump free. Then add the veggies and mix well again.
- Spread in pan and give it a good shake so that all is evenly distributed.
- Bake about 30 - 40 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles
