I'm surprised this isn't posted. It's a "Dear Abby" favorite from 1959. Surprisingly good, and like she says, don't tell anyone there aren't apples until AFTER they eat it!!!

Ingredients
  • Pastry for a double-crusted 9-inch pie
  • 2 cups of water
  • 1-1/4 cups sugar
  • 2 teaspoons cream of tartar
  • 20 whole soda crackers (The small, square ones, with 4 sections to a "sheet" that you can break each sheet into four crackers and stack until you have 20 total.)
  • Butter
  • Ground cinnamon

Directions
  1. Preheat the oven to 375 degrees
  2. Line the botton of a 9-inch pastry dish with the pastry.
  3. In a medium saucepan, boil the water, sugar, and cream of tartar.
  4. Add the soda crackers and boil only 1-minute. (The mixture will be soupy, but it will thicken)
  5. Gently spoon it into the pie shell.
  6. Dot the top with butter and sprinkle over the cinnamon to taste..
  7. Cover the pie with the top crust and cut "vents" in it.
  8. Bake for 35 minutes.
  9. Let the pie cool completely so it can "firm up".
  10. You and your guests will SWEAR this delicious pie really does have apples in it!!!!!

I've heard of this with Ritz crackers too. Isn't it grainy tasting or weird? What's the texture like?


My aunt used to make this and I laughed at her when she told me what she was making it out of. Surprise. It really does taste like apple pie.


I use to make a mock apple pie with ritz crackers so i know this has to be good. will try it some time. thanks for posting it.
