How to make it

  • Make the dough the night before
  • In a large bowl place the warm water and sprinkle on the yeast and a couple of tsp of sugar and let sit till yeast is foamy- about 10 minutes
  • Add and stir in the ramaining sugar, eggs, milk and salt and beat with a wooden spoon by hand until well blended
  • Beat in 4 cups of flour untiol blended and then beast in shortening with a spoon
  • Gradually add remaining flour and stir in by hand, it will become more stiff but the dough is not meant to be keneaded
  • Cover bowl with plastic and chill the dough overnight
  • When ready to prepare, remove dough from bowl ( I removed about 1/4 of it , it will be cold and sticky ) with floured hands and roll dough out on floured board or marble surface about 1/8 to 1/4 inch thich
  • With a sharp knife cut into rectangle pieces and place a few at a time in hot oil ( of most importance make sure your oil is hot enough and do not crowd while frying )!!!
  • These will puff up and rise to the surface and look like pillows
  • Use a slotted spoon to turn and brown the other side
  • These will cook fast
  • Place beignets in a paper lined basket and dust heavuly with powder sugar
  • Great with coffee or cafe au lait
  • If you have the tiome, make as much as you need and keep beignets warm in a 200F oven and then dust with the sugar before serving

    Have had these in New Orleans many times and they are to die for. I know others will enjoy them as well. I must admit that the powdered sugar gets on everything, but it's well worth it. Hope you'e doing well.

    These sound great. I had them in Amsterdam in December. That version had raisins and bits of apple in them. They are great with a strong cup of coffee!
