Ingredients

How to make it

  • OK, so I cheat a little here and there. I use a store bought piecrust. I was never good at those.
  • Fry the bacon up crisp, remove from skillet, drain on paper towel. See Photo
  • Beat the eggs slightly in a small bowl.
  • Whisk in the remaining ingredients except the chopped onion.
  • Line the bottom of the piecrust with the crumbled bacon. See Photo
  • Layer the chopped onion on top of the bacon.
  • Then add a layer of shredded cheese. See Photo
  • Pour the egg mixture over the top of the other ingredients.
  • Preheat the oven to 425 degrees F. Cover the edge of the piecrust with foil.
  • Place the pie in the oven and cook uncovered for 15 minutes.
  • Reduce the oven temperature to 300 degrees F. Continue to bake for about 30 minutes or until a knife inserted half way between the edge and the center comes out clean.
  • Let stand for 10 minutes, cut and serve hot.

    Yeah, some things you can do better from scratch and some you will never know the difference. I am a terrible baker and piecrust still eludes me so I just buy them. You can certainly adjust the zest in this recipe by adding the "other half" of the taco seasoning or by adding some hotter peppers. Personally I like to have the lining of my mouth stay intact most of the time. :)
