Creamy Italian Soup

- 2 T EVOO shopping list
- 1 medium onion chopped shopping list
- 1 can 8oz mushrooms drained ( can use fresh ) shopping list
- 1 red pepper chopped shopping list
- 1 medium zucchini or yellow squash chopped shopping list
- 3 garlic cloves minced shopping list
- 3 1/2 cups chicken broth shopping list
- 1 can/jar your favorite spaghetti sauce shopping list
- 1/8-1/4 tsp red pepper flakes shopping list
- 1/2 bag cooked spiral noodles shopping list
- 2 cups half and half shopping list
- 1/4 cup chopped fresh basil (so important) shopping list
How to make it
- Add oil to large pot on medium heat.
- Cook onion until translucent (4min).
- Add Garlic, Mushrooms, Pepper, and zucchini.
- Cook and stir 3 min
- Add broth, spaghetti sauce, and red pepper flakes.
- Change to high heat and bring to boil.
- Reduce heat. Cover. Simmer 30 min
- Add basil and noodles.
- Stir in half and half. Cover.
- Reduce to medium low and cook 5 minutes until heated through.
- Sprinkle with mozzerella cheese if you want when done.
