How to make it

  • Preheat oven to 350F, grease or line muffin cups with paper liners.
  • In a medium bowl, combine bananas, yogurt, lemon juice, extracts and food colouring. Set aside.
  • In another medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  • In a large bowl, cream butter and sugar until fluffy.
  • Add tofu, beating well to combine.
  • Beginning and ending with the dry mixture, alternate additions of flour and banana mixtures, beating ell after each addition.
  • Bake for 20-25 minutes, until they test done.
  • Turn out immediately and cool completely on a wire rack.
