Ingredients

How to make it

  • Blend the eggs into a dredging mixture. No milk, no water.
  • Spread the flour onto a plate, add salt and pepper to taste.
  • Dredge the chicken into the eggs, then the flour mix, then back to the eggs and then back to the flour See Photo. "Double Dipping" is approved here!
  • Put into a hot skillet with a lid and just enough oil to cover the bottom See Photo.
  • Cook without a lid for about 4-5 minutes on a side.
  • Cover and cook for about 15 minutes on a side. Try not to turn them more than once.
  • Ready to serve..

    The Skillet:
    Added this pic, my wife's mother purchased this iron skillet for 50 cents in 1937. It has been in continuous use ever since. It weighs about 8 pounds and I have to get it out of the pan closet for my wife whenever we want to fry in it. Tons of fun!

    Exactly! This leaves room for us to add our own "personal touch" too. On my side it would be some salt, pepper, maybe garlic--definitely no "wash" stuff going on. The pure egg makes for a heartier, crunchier coating.

    This is a no frills, Southern Fried, double dredged Chicken. Even if you have an aversion to fried foods it is not awful. It is fried in very little oil and this is made with skinned and deboned breast meat.

    Just the basic Southern Fried Chicken my mother, grandmother, mother-in-law & grandmother-in-law, fixed. I guess, since most of them lived to age 90, it must be OK.

    Except for the 40 lbs of gravy on the mashed potatoes.
