How to make it

  • In a zip lock bag, add rub ingredients, close bag and pound until powdery and if you want pasty.
  • Cut meat open like a book, horizontally,
  • Make slits in meat and stuff garlic slices into them
  • Drizzle olive oil over meat and coat with rub mixture and then rub into meat a little,
  • Close meat and tie with cooking twine
  • Make slit on top, side and underneath and stuff more garlic slices
  • Drizzle all outside with olive oil
  • Rub more rub mixture over meat (don't be light handed)
  • Put meat in crock pot
  • Cut carrots and potatoes (cubed into quarters) (Do not use a quick cook potatoe as they will fall apart)
  • Place carrots and potatoes around meat
  • Optional: 1-2 large onions sliced
  • Drizzle olive oil around carrots & potatoes
  • Season with salt, pepper, paprika, thyme, garlic
  • In mixing bowl mix broth, paste & garlic powder to well blended,
  • pour over meat
  • Cover, cook at high for 3 hours
  • Lower to low for 2-3 hours more
  • Remove meat, veggies & potatoes
  • Pour juice into sauce pan, skim off fat
  • Take about 1-2 cups out and mix with cornstarch or tapicoa starch,
  • Slowly whisk back into sauce pan, and stir till boiling & thick
  • If too thick, add some milk or water till desired consistency
