I'm told this simple version of butter beer dates back centuries. Author J. K. Rowling does not provide a recipe for butterbeer in her wildly popular Harry Potter book series, so this version is pure speculation. Ingredients
- butter beer 1................... shopping list
- 1 pint real vanilla ice cream (use a brand that includes vanilla seed specks for best flavor or make your own) shopping list
- 1/4 cup real butter, at room temperature shopping list
- 1/2 teaspoon butterscotch extract shopping list
- 1/4 cup brown sugar shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon freshly grated nutmeg shopping list
- 1 quart apple cider shopping list
- apple slices for garnish, optional shopping list

- butterbeer 2 ............hot drink........... shopping list
- 1 liter- cream soda shopping list
- 2-3 tbsp butter shopping list
- 2-3 tbsp brown sugar shopping list
- 3/4- to 1 cup cream shopping list
- 4 or 5 Werther's Originals candies shopping list

- butterbeer 3 ....................cold version........... shopping list
- 1 cup butterscotch schnapps shopping list
- 7 cups cream soda (almost one 2 liter bottle) shopping list
How to make it
- Butter beer one...................
- On medium speed, beat together vanilla ice cream, butter, butterscotch extract, brown sugar, cinnamon, and nutmeg until well-combined. Pour into a container and re-freeze.
- When ready to serve, gently heat apple cider in a saucepan until steaming hot.
- Place 1 scoop of ice cream in a thick soda glass or large mug. Top with steaming apple cider. Garnish with apple slices, if desired.
- Yield: 4 to 6 servings

- Butterbeer 2...................hot drink.................
- Put the cream soda in a pan to boil.
- Melt the butter and sugar together until the sugar has dissolved.
- Pour the butter and sugar mixture into the pan of boiling cream soda (make sure the soda is boiling, or the butter and sugar will solidify).
- Add the cream.
- Add the Werther's Originals and stir continuously until they melt.
- Serve hot.
- You can also add a couple of shots of Butterscotch Schnapps for that extra kick!.......yeah baby!!!!............yummm

- Butterbeer 3 ---- cold version
- Carefully mix just before serving, adding the schnapps to the soda then stirring gently to mix well, or the fizz will dissipate too soon.
- Serve in beer mugs and enjoy
