Asparagus Pesto

- 1 lb. fresh asparagus shopping list
- 1/2 cup freshly grated Parmeasan cheese shopping list
- 1/2 cup olive oil shopping list
- 1/ cup pine nuts {Dont know where to find these left them out} shopping list
- 1 garlic clove shopping list
- 1 tbs. lemon juice shopping list
- 3/4 tsp. salt shopping list
How to make it
- Snap off and discard tough ends of asparagus
- Cook asparagus in boling water covered 3-4 minutes ti ll crisp tender
- Dain
- Plunge sparagus into ice water to stop cooking process
- drain, coarsely chop asparagus
- Process aparagus , cheese, and remaining ingredients in food processor 30 secons to 1 minute till smooth
- Scrape down side as needed.
- May toss ith cooked pasta your choice
- or spread on Crostini topped with chopped tomatoe and bacon
