How to make it

  • Preheat oven 180c.
  • Grease a 19cm x 30cm pan. Line base and sides with baking paper, extending 2cm above sides of pan. This will make pulling out the slice easier.
  • Combine coconut, sugar and flour in a bowl. Add butter and vanilla. Mix to combine. Press over base of prepared pan.
  • Cook in oven for 15 - 20 minutes, until golden brown. Cool completely in pan.
  • Meanwhile make the topping. In a saucepan over a medium heat, combine the pineapple topping ingredients. Keep stirring until mixture boils and thickens.
  • Pour evenly over the cooled base and spread evenly. Refrigerate until set.
  • Beat cream until firm peaks form and spread over set topping.
  • To serve, lift the pineapple slice from the pan and cut into squares.
