Pineapple Slice

- 1 cup desiccated coconut shopping list
- 1/2 cup caster sugar shopping list
- 1 1/2 cups plain flour shopping list
- 185g unsalted butter, melted shopping list
- 1 tsp vanilla extract shopping list
- 300ml thickened cream shopping list
- pineapple TOPPING shopping list
- 440g can crushed pineapple shopping list
- 1 cup water shopping list
- 3/4 cup caster sugar shopping list
- 1/4 cup custard powder shopping list
How to make it
- Preheat oven 180c.
- Grease a 19cm x 30cm pan. Line base and sides with baking paper, extending 2cm above sides of pan. This will make pulling out the slice easier.
- Combine coconut, sugar and flour in a bowl. Add butter and vanilla. Mix to combine. Press over base of prepared pan.
- Cook in oven for 15 - 20 minutes, until golden brown. Cool completely in pan.
- Meanwhile make the topping. In a saucepan over a medium heat, combine the pineapple topping ingredients. Keep stirring until mixture boils and thickens.
- Pour evenly over the cooled base and spread evenly. Refrigerate until set.
- Beat cream until firm peaks form and spread over set topping.
- To serve, lift the pineapple slice from the pan and cut into squares.
