How to make it

  • Sift dry ingredients in mixing bowl, set aside
  • mix all liquid ingredients in a mixing bowl
  • combine wet ingredients to dry and stir until smooth
  • pour batter into ungreased 15 x 10 x1 inch baking pan lined with baking paper
  • Bake at 350 for about 25 to 30 minutes or until a wooden tothpick inserted inc enter comes out clean.
  • For glaze:
  • heat orange juice, zest, 1/2 cup water until simmering. Add sugar and stir until dissolved.MIx corn starch and water and slowly add to simmering juice. Cook about 4 or 5 minutes until corn starch thickens glaze.
  • Spread over cake.
  • Refrigerate

    I just made this and it is extremely good!!! I made it as written except I used 1 less egg and only 1/2 cup of oil...this worked out perfectly! It doesn't have the texture of gingerbread (as stated in the recipe description) but it does have the taste of gingerbread! I love the orange glaze...its very refreshing! I added a photo!
