How to make it

  • beat butter and sugar to a cream
  • add egg and vanilla and honey - beat well
  • add sifted flour a lilttle at a time - mix into a stiff paste
  • take sall amounts of mix and roll into 24 balls
  • place 5 cm apart on greased trays and then lightly press with a floured fork to make it look pretty :)
  • cook for 10-15 minutes in a moderate oven until a nice golden colour
  • allow to cool completely then ice
  • for icing:
  • sift icing sugar then add butter and honey and mix well add lemon juice (if preffered) to make a smooth paste
  • join honey biscuits in pairs and enjoy with a hot cuppa mmmm
