Seafood Saute Recipe
An easy sauté for company - prep can all be done in advance and cooking time is about 10 minutes

Ingredients
  • 3 Tbsp butter
  • 3 Tbsp olive oil
  • 5 cloves garlic, minced
  • 1 pound fresh mushrooms, sliced
  • 1/3 cup chili sauce
  • 1/4 cup dry, white wine
  • 1/4 cup lemon juice
  • 1 cup chopped green onions (including tops), sliced 3/4 to 1 inch long
  • 1 pound raw shrimp, peeled and deveined
  • 1 pound bay scallops
  • salt
  • Cajun spice
  • 1/3 cup chopped fresh parsley

Directions
  1. Heat butter and oil in a large skillet. Add the garlic and mushrooms and sauté until the mushrooms let off most of their liquid. Add chili sauce, wine and lemon juice. Bring to a boil.
  2. Add the green onions and shrimp. Cook 2 minutes.
  3. Add the scallops and cook just until the shrimp turn red and the scallops are cooked through (but not overcooked).
  4. Add salt and sprinkle with Cajun spice to taste. Scatter fresh parsley over the top and serve over rice.

WoW! I love having recipes that I can do ahead of time so that I have more time to spend with guests. This recipe won't wait that long because I already have the ingredients in my refrigerator. Thank you for a great post. :D


Glad to help, Shandy! I use a Zojirushi rice cooker (it is absolutely fabulous - pricey, but well worth the money!) so the rice is done when I want to eat, prep all the ingredients an hour or so before the guests are to arrive, and then I can relax and visit almost right up 'til dinner time! The clean up goes really fast for this one, too, so again more time to visit!
