How to make it

  • Heat butter and oil in a large skillet. Add the garlic and mushrooms and sauté until the mushrooms let off most of their liquid. Add chili sauce, wine and lemon juice. Bring to a boil.
  • Add the green onions and shrimp. Cook 2 minutes.
  • Add the scallops and cook just until the shrimp turn red and the scallops are cooked through (but not overcooked).
  • Add salt and sprinkle with Cajun spice to taste. Scatter fresh parsley over the top and serve over rice.

    Glad to help, Shandy! I use a Zojirushi rice cooker (it is absolutely fabulous - pricey, but well worth the money!) so the rice is done when I want to eat, prep all the ingredients an hour or so before the guests are to arrive, and then I can relax and visit almost right up 'til dinner time! The clean up goes really fast for this one, too, so again more time to visit!

    WoW! I love having recipes that I can do ahead of time so that I have more time to spend with guests. This recipe won't wait that long because I already have the ingredients in my refrigerator. Thank you for a great post. :D
