Townhouse Fried Chicken

- 2 pkgs. keebler townhouse crackers(can use ritz, but flavor is different) crushed shopping list
- 3 whole boneless chicken breasts, halved, pounded to about 2/3 of an inch thickness shopping list
- 2-3 tsps. garlic powder shopping list
- salt and pepper to taste, i like to use Lawrys seasoned salt shopping list
- 3 eggs, well whisked shopping list
- 2 tblsp. milk shopping list
- 1 c.(2 sticks) of butter shopping list
- whatever oil you like to fry with, i use vegetable shopping list
How to make it
- Halve your breasts, and pound in between 2 sheets of wax paper
- Crush the crackers really well, no chunks
- Mix the cracker crumbs with the garlic, salt and pepper, place in a bowl for breading the breast halves
- whisk eggs in a shallow dish, stir in the milk
- melt 1 stick of butter in a deep fry pan, add enough oil to equal
- 1/2 in. deep over med/high heat(oil will help to keep the butter from burning)
- dip breast halves in egg mixture(one at a time ha ha)
- press the egged half into the crumbs really well, double dip and crumb if desired
- place into the heated oil/butter
- fry about 5-7 minutes each side, chicken should be a rich golden brown
- after 3 pieces of the breast, add other stick of butter and oil(1/2 in)
- place cooked chicken on paper towel to absorb the excess grease
- eat up!
