How to make it

  • In a large bowl, combine the flour, bran, sugar, baking powder and salt. In another bowl, combine the egg, egg white, milk and oil; add to the dry ingredients. Fold in pecans.
  • Waffle Iron: use non-stick cooking spray on waffle iron for every waffle.
  • Bake in a preheated waffle iron according to manufacture's directions until golden brown. Yield: 6 waffles.
  • Serving size: 1 waffle.
  • Nutritional Values: Calories per serving: 233, Fat 11, Cholesterol: 37mg, Sodium: 344mg, Carbohydrate: 28g, Fiber: 2g, Protein: 8g.
  • Diabetic Exchanges: 2 starch, 2 fat.

    Hay Spinach: You have diabetes and you eat heaps more sweet sorta stuff than I do. Amazing the way you swip and swap stuff around to make it taste good and not really use sugar.Good on you mate. RJ
