    Hey RR.... this is what I love about this site....the way we all can interact and suggest different variations on a recipe....going to make some of these Bar Food Babies later today (May Day) at a Kentucky Derby party my house. Regarding your idea, I actually have a portabella schroom caps appetizer that I will post next...its my most asked-for dish that I call Sally's Schrooms after the friend that taught it to me.

    Hey Yorkman!
    Love the veggies and I will try it also got me to thinking that you could get large portabella mushroom caps and stuff them with the other veggies and then top with the cheese, this would be the way to go after a few beers or glasses of wine so you don't topple the tower.

    This looks really good! Zucchini and mozzarella are two of my favorite ingredients and would love to try this one.
