How to make it

  • Using electric mixer or whisk,beat cream and almond extract until stiff peaks form.
  • In saucepan,over med heat,bring sugar,gelatin and 1/2 c water to a simmer and stir till sugar and gelatin dissolve. Remove from heat,add berries,and lemon juice and stir till mixture begins to thicken.
  • Fold whipped cream into berry mixture and spread in pie crust. Refrigerate till set,a few hours or overnight.
