liver with rosemary

- 1 lb of lambs liver or calf , pigs ox if preferred shopping list
- 1 large onion sliced shopping list
- 3 sprigs of fresh rosemary shopping list
- 2-3 tablespoons of flour shopping list
- 1 tablespoon tomato paste in 1/2 cup of water shopping list
- some olive oil to fry off liver shopping list
- salt and pepper to taste shopping list
How to make it
- slice onion and saute in some olive oil until tender
- slice liver into bite size strips
- place some flour ,salt and pepper in plastic sandwich bag
- (big enough to hold flour and the liver pieces)
- place the liver in the bag of flour and shake well to coat
- once coated add to frying pan with onions
- brown liver for about 5 mins on medium heat
- stir tomato paste into 1/2 cup of water and add to pan
- lay sprigs of rosemary on top of mixture and simmer slowly for 15 mins
- stirring gently a few times to let rosemary mix well , add a little more olive oil (1 or 2 tablespoons ) and allow mixture to simmer until rich and thickened
- remove roosemary and serve with creamy mashed potatoes.......
- remove rosemary
