Ingredients

How to make it

  • slice onion and saute in some olive oil until tender
  • slice liver into bite size strips
  • place some flour ,salt and pepper in plastic sandwich bag
  • (big enough to hold flour and the liver pieces)
  • place the liver in the bag of flour and shake well to coat
  • once coated add to frying pan with onions
  • brown liver for about 5 mins on medium heat
  • stir tomato paste into 1/2 cup of water and add to pan
  • lay sprigs of rosemary on top of mixture and simmer slowly for 15 mins
  • stirring gently a few times to let rosemary mix well , add a little more olive oil (1 or 2 tablespoons ) and allow mixture to simmer until rich and thickened
  • remove roosemary and serve with creamy mashed potatoes.......
  • remove rosemary
