Moms Carrot Cake

This is the cake I asked for each year on my birthday. The cake is moist and the frosting fantastic!
Ingredients
- cake shopping list
- 2 cups sugar shopping list
- 2 cups flour shopping list
- 2 tsp baking powder shopping list
- 1 cup Wesson Oil shopping list
- 4 eggs shopping list
- 3 cups grated carrots shopping list
- 2 tsp cinnamon shopping list
- frosting shopping list
- 8 oz cream cheese, room temp shopping list
- 1/4 lb butter, room temp shopping list
- 1 lb powdered sugar shopping list
- 2 tsp vanilla shopping list
- 1 cup chopped walnuts/pecans (optional) shopping list
How to make it
- Cake
- Sift and mix dry ingredients
- add oil and stir well
- add eggs one at a time, continue stirring between each
- add carrots
- batter will be very thick
- Bake 35 minutes at 350
- Frosting
- Blend butter & cream cheese
- add sugar & vanilla
- blend until smooth & creamy
- stir in nuts
