Homemade Chili And Lime Mayonnaise Recipe

Ingredients

1 egg yolk

1 tablespoon lime juice

1 fresh red chili, I used a red jalapeno , I think they meant a Asian type.

finely minced

2 tablespoons chopped fresh cilantro

1 cup (scant) light olive oil

Salt and pepper to taste

Directions

To make mayonnaise, place egg yolk, cilantro , chili and seasoning in food processor and process until foaming.

With machine still running add olive oil in a VERY THIN stream.

Taste and adjust seasonings.. Add a little hot water if it is to thick.

Chill.

Enjoy
