Anchovy Toasts For Cocktail Hour

- One can of anchovy fillets, reserving the oil shopping list
- 2 tablespoons of chopped parsley shopping list
- 1 clove of chopped garlic shopping list
- 2 slices of day old bread, cut in quarters shopping list
- softened butter shopping list
How to make it
- Open can of anchovy fillets, drain. Reserve the oil.
- Cut anchovies into small pieces.
- Pound the anchovies in the mortar and grind the parsley and garlic into the anchovy mix adding reserved oil to make a paste.
- Add a little olive oil if necessary.
- Cut the day old bread into quarters, toast or saute if desired in a little butter. (I prefer a dry toast for the spread)
- Spread with the anchovy mixture.
- Just before serving, top with a smidge of soft butter and run under the broiler to just melt the butter and serve immediately, nice and warm.
