Another one pulled from Mom's cocktail snacks. They are addictive and great with drinks, especially a bracing gin and tonic with lemon. And it is fun to do in a mortar and pestle for a little upper arm work out!

Ingredients
  • One can of anchovy fillets, reserving the oil
  • 2 tablespoons of chopped parsley
  • 1 clove of chopped garlic
  • 2 slices of day old bread, cut in quarters
  • softened butter

Directions
  1. Open can of anchovy fillets, drain. Reserve the oil.
  2. Cut anchovies into small pieces.
  3. Pound the anchovies in the mortar and grind the parsley and garlic into the anchovy mix adding reserved oil to make a paste.
  4. Add a little olive oil if necessary.
  5. Cut the day old bread into quarters, toast or saute if desired in a little butter. (I prefer a dry toast for the spread)
  6. Spread with the anchovy mixture.
  7. Just before serving, top with a smidge of soft butter and run under the broiler to just melt the butter and serve immediately, nice and warm.

Love those salty little anchovies - this sounds like great party fare!


Mmmmmmm....what could be better than anchovies and garlic together?? ON GARLIC rounds this also would be great!! I also mix in a little blue cheese to the anchovies when I make these!!
