How to make it

  • wash & pat chicken
  • Put chicken in a bowl,
  • Toss the thighs with a mixture of the lemon juice
  • crushed garlic & thyme
  • Make sure all sides are coated
  • Refrigerate chicken for 2hrs. or more turn pieces @ least once
  • Place thighs on a rack in thebaking pan, skinside up
  • Sprinkle with salt & pepper
  • Bake @ 450 degrees for about 30 min.
  • Halve cherry tomatoes
  • Melt butter in skillet. Add tomatoes & cook 1-2 min.to heat through
  • Put chicken on serving platter. Spoon on sauteed tomatoes
  • Serve immediately

    Delicious! I had four thighs and I am not certain if one lemon would work with eight or not. The four of mine pretty much used up the lemon juice. I did add the angel hair pasta. I liked the buttery tomatoes. I've never had them that way before! I think some fresh basil would add a nice touch. I cooked my thighs at 375F for 50 minutes - didn't do the 450 route. Added this to IMI 11/29/14

    Thanks for the comment. I don't have angel hair
    pasta that often but I think it really does fit
    here, tossed with butter, parsley, & sprinkled
    with parmesan cheese, & a tossed green salad with
    oil & vinegar & a crusty bread will complete the menu
