Ingredients
  • 2 pounds cut up potatoes
  • 1 tablespoon olive oil
  • 1-1/4 teaspoon salt
  • 1/2 cup chopped green bell pepper
  • 3/4 teaspoon paprika
  • 1/2 teaspoon finely minced garlic
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon thyme

Directions
  1. Combine potatoes and olive oil in a rectangular baking pan.
  2. Sprinkle with seasonings and toss to coat well.
  3. Roast at 450 for 35 minutes stirring 2 to 3 times.
