How to make it

  • Preheat oven to 400
  • Cream together butter & sugar
  • Add flour and egg yolk & extract and mix well
  • Add cream cheese and mix well
  • Roll into 5/8" balls
  • Place on ungreased cookie sheets (cookies do not spread when baked so you can put them together somewhat)
  • Press your thumb into each to flatten it and make an indentation.
  • Fill with jam
  • Bake 350 for about 15-20 minutes
  • Watch to be sure they do not brown to much around edges
  • You want them cooked but still light in color

    I made 3 variations of this: lemon curd with powdered sugar, raspberry w/ white chocolate drizzled over, and an apricot jam/amaretto filling w/ marscapone cheese frosting drizzled on top and a few toasted almonds. People went crazy for them!

    These were lovely. I made them to accompany a white chocolate raspberry swirl cheesecake for a party, and drizzled them with a white chocolate glaze when cool. They were devoured! Thanks for the recipe....
