Roasted Asparagus

- 1 lb asparagus spears (thicker spears are best) shopping list
- 1-3 tbsp olive oil shopping list
- 2 clove garlic minces or 3 tbsp minced garlic in jar shopping list
- Kosher or sea salt shopping list
- Fresh grated black pepper shopping list
- lemon juice shopping list
How to make it
- Preheat oven to 400
- Rinse asparagus and cut off tough ends only
- Lay asparagus spears in single layer on baking sheet lined with foil
- Drizzle oil, pepper, salt & garlic over asparagus
- Roll back and forth to evenly distribute seasonings
- Roast in oven approximately 10 minutes until lightly browned and tender when pierced with fork (return to cover for a few more minutes if still tough - watch not to over cook)
- Remove to plate and drizzle with lemon juice before serving
- WARNING: Make at least a double batch
