Tangy Roquefort Tomatoes

- 1/2 c finely chopped ham shopping list
- 1/4 c Roquefort cheese, crumbled shopping list
- 1/4 c sour cream shopping list
- 1/4 t fresh lemon juice shopping list
- Dash freshly ground black pepper shopping list
- 36 cherry tomatoes (I like to use a mix of red and yellow, when I can find the yellow ones) shopping list
- *chives - optional shopping list
How to make it
- In a small bowl combine all ingredients except the tomatoes
- Slice the tops off of the tomoatoes and scoop out most of the pulp (reserving for salsa, or to add to pasta, omlettes, etc)
- Spoon 1/2 t of the ham/cheese mixture into each tomato shell
- Serve chilled
- *Top with chives if desired
