How to make it

  • Heat the oil in a large soup pot over medium-high heat, add onion, and cook 10 minutes, stirring occasionally, until onion begins to brown.
  • Add garlic, ginger, and spices and cook 3 minutes, stirring frequently.
  • Add tomatoes, sweet potatoes, and carrot and cook for 5 minutes.
  • Add water and salt, bring mixture to a boil, then cover the pot, reduce the heat, and simmer soup 30 minutes.
  • Using a blender, food processor, or hand-held immersion blender, puree the soup until nearly smooth.
  • Add peanuts, peanut butter, and cayenne, if using, and whisk to combine thoroughly.
  • Gently reheat soup and serve hot, topped with cilantro.

    I have a friend that visits Ethiopia every year, she has told me about this recipe. I definitely have to give it a try. Thanks for posting! p.s. Saw your comment on someone else's post, Kristopher in San Fransisco is the guy who runs group recipes. Help Group. He has asked people to post questions at this link. It is the help forum. I have had issues with my recipes not loading either, after all that typing! But I figured it out: the photos we are trying to use are too large. I enter my recipe first and submit it, then add the photos (which I have to reduce in size manually). Hope this helps!
