Four Way Breakfast Breads

- 8 cups of sifted all purpose flour shopping list
- 4 tablespoons of double-acting all purpose baking powder shopping list
- 1 tablespoon of salt shopping list
- 2 cups of sugar shopping list
- 3 cups of milk shopping list
- 4 eggs shopping list
- 2 cups of melted butter shopping list
- Variation #1 shopping list
- 1/2 cup of brown sugar shopping list
- 1/2 cup of favorite chopped nuts shopping list
- 1 teaspoon of cinnamon shopping list
- Variation #2 shopping list
- 1/2 cup of brown sugar shopping list
- 1 teaspoon of cinnamon shopping list
- 2 tablespoons of flour shopping list
- 2 tablespoons of butter shopping list
- 1/2 cup of chopped nuts shopping list
- Variation #3 shopping list
- 2 cups of whole cranberries (you could use blueberries too) shopping list
- 2/3 cup sugar shopping list
- pinch of salt shopping list
- 2 tablespoons of grated orange rind shopping list
- 2 tablespoons of orange juice shopping list
- Variation#4 shopping list
- 1/2 cup of sugar shopping list
- 1/4 teaspoon of nutmeg shopping list
- 1/8 teaspoon of ginger shopping list
- 1/8 teaspoon of cinnamon shopping list
- 1/8 teaspoon of mace shopping list
- 2 cups of sliced peeled apples shopping list
How to make it
- In a mixing bowl combine the flour, baking powder, salt and sugar.
- Beat the milk with the eggs.
- Stir liquid into flour mixture to make a lumpy batter.
- Add the melted butter.
- Divide batter into 4 greased 8 inch square baking pans (fixed each of four variations) and bake in a preheated 375 degree oven for 25 to 30 minutes until the breads test done.
- Remove the pans from the oven.
- Cool on racks.
- When cool, wrap and freeze.
- Reheat in a moderate oven at 350 degrees for 10 minutes. Serve warm.
- Variation #1 Cinnamon Nut Bread
- Sprinkle the batter in the greased pan with the brown sugar, cinnamon and nuts. Proceed as directed above.
- Variation #2 Struesel Bread
- Sprinkle the batter with the brown sugar MIXED with the cinnamon, flour, butter and nuts. Proceed as directed.
- Variation #3 Cranberry Bread
- Bring to a boil the cranberries sugar salt orange rind and juice.
- Simmer for five minutes. Turn mixture into the bottom of a greased 8 inch square pan. Pour one quarter of the batter over the cranberries and bake. Turn out, cranberry side up to cool.
- Variation #4 Apple Bread: Generously butter an 8 inch cake pan. Sprinkle the bottom with1/2 cup of sugar. Toss the apples with the spices, stir well and cover the bottom of the cake pan with the apples. Pour one quarter of the batter over the apples and bake. Turn out, apple side up to cool.

I'm giving you a 5 just for typing all those ingredients and directions! I tend to hesitate about adding long recipes....but you're an inspiration. And I'll try the bread next time I have a lot of people to feed. Bonjody
