Crawfish Etouffee

- 1 stick of butter shopping list
- 4-6 T flour shopping list
- 1 T tomato paste shopping list
- 3/4 cup green pepper shopping list
- 1 cup chopped onion shopping list
- 3/4 cup chopped celery shopping list
- 2 cloves garlic, minced shopping list
- 2 -3 cups of chicken broth (preferably homemade) shopping list
- 1/2 can tomatoes, chopped in blender shopping list
- salt to taste shopping list
- cayenne and black pepper to taste shopping list
- Tabasco sauce shopping list
- 1 pound peeled crawfish tails shopping list
- 1/2 cup chopped green onions shopping list
How to make it
- Melt butter in heavy pot and add flour.
- Make a light roux.
- Add tomato paste, pepper, onion, celery and garlic.
- Cook, stirring about 5 minutes.
- Add chicken broth and tomatoes.
- Add salt, pepper and Tabasco.
- Simmer about 30 minutes.
- Add crawfish and simmer another 10 minutes.
- Add green onions for brief period.
- Enjoy over rice.
