Ingredients

How to make it

  • Melt butter in heavy pot and add flour.
  • Make a light roux.
  • Add tomato paste, pepper, onion, celery and garlic.
  • Cook, stirring about 5 minutes.
  • Add chicken broth and tomatoes.
  • Add salt, pepper and Tabasco.
  • Simmer about 30 minutes.
  • Add crawfish and simmer another 10 minutes.
  • Add green onions for brief period.
  • Enjoy over rice.

    This is a classic and very good recipe. And the cookbook you mentioned is great (I have a copy) and can be purchased at Pelican Press for $20. (Google Pelican Press) Etouffee which means smothered or braised is actually more Creole than Cajun, but is made in both Creole and Cajun country. Excellent post.
