    This is what the history books seem to say about the grilled cheese.

    According to food historians, cooked bread and cheese is an ancient food, popular in many cultures. In the U.S., the modern version of the grilled cheese sandwich originated in the 1920s when inexpensive sliced bread and American cheese became easily available. It was originally made as an open sandwich. The top slice of bread became common by the 1960s.

    I could have cured, smoked and aged a ham in the time it took me to read just the intro - But I will be sure to savour this when I get a ham of quality, worthy of such a combination. And my great thanks for not using the word "panini".

    This is one good sandwich! Bringing the cheese to room temp. is a great tip. Room Temp. cheese always seems to have much more flavor no matter what kind it is.
