Crispy Pot Sticker Soup with Garlicky Greens

- 2 c vegetable broth shopping list
- 2 tsp extra virgin olive oil shopping list
- 2 large cloves garlic,minced shopping list
- 1/2 large orange or yellow pepper,seeded,finely chopped shopping list
- 1/2 jalapeno,seeded and fimely chopped shopping list
- 5 c packed baby spinach or mixed greens(8 oz) shopping list
- 1 Tbs canola oil shopping list
- 1 pkg frozen vegetable pot stickers shopping list
- 1 Tbs cilantro,chopped shopping list
How to make it
- In small saucepan, bring broth to simmer.
- Meanwhile,heat olive oil in large skillet over med. heat. Add garlic; cook 30 seconds,until fragrant. Add peppers;cook ,stirring often till they begin to soften. Add spinach;cook 1 min,until just wilted. Divide mixture between 2 soup bowls.
- In large skillet,heat canola oil over medium heat. Place pot stickers into skillet flat-side down;cook 10 mins,turning occasionally until evenly browned. Place dumplings into 2 bowls. Add broth to bowls. sprinkle with cilantro.
