How to make it

  • COOK THE SHRIMP
  • Get the water boiling and add the vinegar, tabasco and salt.
  • Put the Old Bay Seasoning in a coffee filter and staple it shut to make a bag. Toss the bag in the boiling water.
  • When you have a good hard boil toss in the shrimp. When the turn pink and float to the top they are done.
  • NOTE: Reserve a cup of the shrimp boil water to saute the vegetables in.
  • Drain the shrimp and run cold water over them to stop the cooking.
  • Saute the minced onions and peppers in about 1/4 cup of the shrimp boil water until well softened.
  • Whisk together the egg, milk, butter and key lime curd. When well beaten fold in the vegetables.
  • NOTE: Link to Key Lime Curd recipe. But you can also buy lemon curd in most groceries.
  • Key Lime Curd
  • You have enough ingredients to make two quiches. So halvies on everything.
  • Into the pie shell first layer of shrimp, top shrimp with a good layer of cheese, then pour on the egg and vegetable mix.
  • Preheat oven to 350 and bake for about 45 minutes or until egg is firm.

    Wow Otter - this looks awesome! Have some frozen shrimp in freezer. I guess I'm lucky - my hubby loves quiche!
