Paul Prudhomme's Sweet Potatoes

- 2 1/2 lbs (5 medium) sweet potatoes ( grease before baking) shopping list
- whole pecan halves shopping list
- Syrup: shopping list
- 5 Tbs unsalted butter shopping list
- 1/2 cup white sugar shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 cup brown sugar, packed shopping list
How to make it
- Bring syrup to a boil - add 1/2 cup water (Be careful, it will spit)
- Slice potatoes lengthwise. Place in a single layer in a Pyrex dish. Pour sauce over. Place pecan halves on top of each potato slice.
- Cook 45 minutes to 1 hour at 400 degrees. Check from time to time to make sure the pecans aren't browning too much.
- Note: If you slice the potatoes thicker, they will be less sweet. Thinner and they will absorb the syrup more completely.
