How to make it

  • In a saucepan, combine stock, chili sauce, lime leaves, lemongrass, galangal and chilies.
  • Bring to a boil. Cover. Reduce heat and simmer for 20 minutes.
  • Strain the broth.
  • Add mushrooms, corn, shrimp and fish sauce. Simmer for 2-3 minutes, or until shrimp is just cooked.
  • Add pineapple, lime juice, coriander and green onions and heat for 1 minute.
  • Serve.
