Hot And Sour Soup

- 5 cups chicken stock shopping list
- 2 tsp. Asian chili garlic sauce shopping list
- 6 lime leaves shopping list
- 3 stalks lemongrass, white part only, cut into 1" lengths shopping list
- 1/4 cup thinly sliced galangal shopping list
- 1 tsp. chopped fresh red chilies shopping list
- 1 cup thinly sliced fresh mushrooms shopping list
- 1/2 cup corn kernels shopping list
- 8 oz. diced shrimp or chicken shopping list
- 2 tbsp. fish sauce shopping list
- 1/2 cup diced fresh pineapple shopping list
- 1/4 cup lime juice shopping list
- 2 tbsp. chopped fresh coriander shopping list
- 2 green onions, thinly sliced shopping list
How to make it
- In a saucepan, combine stock, chili sauce, lime leaves, lemongrass, galangal and chilies.
- Bring to a boil. Cover. Reduce heat and simmer for 20 minutes.
- Strain the broth.
- Add mushrooms, corn, shrimp and fish sauce. Simmer for 2-3 minutes, or until shrimp is just cooked.
- Add pineapple, lime juice, coriander and green onions and heat for 1 minute.
- Serve.

Loved it! I used homemade chicken stock and it was a proper comfort meal (with a twist!!)
