How to make it

  • In a large pot, brown the ground beef, then drain.
  • Return beef to pot, add the taco seasoning, tomato juice, vegetables and chili beans.
  • Mix well.
  • Bring to a boil, then reduce heat and simmer for 20 to 25 minutes, or until veggies are tender, stirring occasionally.
  • Serve in bowls topped with the crushed corn chips and cheese.

    mmmm - I love taco soup...and I will have to check out the taco seasoning you use - I DO hate that oily little red stuff that drips out!!
