Herbed Vegetable Ring

- 3 large carrots, grated shopping list
- 1 leek, upper leaves removed, sliced shopping list
- 1 cup cheddar cheese, grated shopping list
- 3 tbsp. fresh parsley shopping list
- 2 tbsp. fresh chives, chopped shopping list
- 1 tsp. fresh tarragon, chopped shopping list
- 1 tbsp. fresh dill, chopped shopping list
- 1/2 cup flour shopping list
- 1/3 cup vegetable oil shopping list
- salt and pepper to taste shopping list
- 4 eggs, separated shopping list
How to make it
- Combine all ingredients except eggs, mix well. Season to taste. Stir in egg yolks. Beat egg whites until stiff-fold quickly into vegetable mixture.
- Spoon into a ring tin, bundt pan, even a muffin pan would work, and bake at 350F for 30-35 minutes or until golden brown.
- Unmould ring on a serving plate and serve with a salad or bread or as a side dish.
